Is Zingerone natural?

It depends. Vanillin carbons are natural when vanillin comes from lignin, eugenol or ferulic acid but petrochemical when made from guaiacol; the acetone-derived three carbons are always petrochemical.

Why the score varies

This ingredient is made commercially by more than one route, and ISO 16128 scores the feedstock actually used. Without a supplier certificate of origin the value cannot be claimed.

RouteFeedstockNOIShareNotes
Guaiacol-derived vanillin + acetone, then hydrogenationpetrochemical guaiacol and acetone0.00~85%
Lignin, eugenol or ferulic-acid vanillin + acetone, then hydrogenationwood lignin, clove eugenol or rice-bran ferulic acid with petrochemical acetone0.71~15%
Ask your supplier. A batch-specific certificate of origin or bio-based carbon test (ASTM D6866) settles which route applies.

How we scored it

C11H14O3 194.2: vanillin-derived C8H9O2 137.2 + acetone-derived C3H5O 57.1 (petrochemical). With plant vanillin 137.2/194.2 = 0.71; guaiacol vanillin 0.0.
What counts. ISO 16128-2 scores the atoms that remain in the final ingredient. Reagents, solvents, catalysts and protecting groups used during manufacture leave no mass behind and are not counted.

Where it comes from

Dominant route: vanillin made from guaiacol is condensed with acetone and hydrogenated, giving 0.0. Alternative: the same steps using vanillin from wood lignin, eugenol or ferulic acid, giving 0.71; isolation from ginger is a trace supply.

In plain English

The compound that gives cooked ginger its sweet-spicy flavour, used here as a flavouring. It is usually made in a factory by joining vanillin with acetone and adding hydrogen. The vanillin may come from wood lignin or from petrochemical guaiacol.
