How we scored it
Enzymatic isomerisation of sucrose's glycosidic bond; all carbons from natural sugar feedstock.
What counts. ISO 16128-2 scores the atoms that remain in the final ingredient. Reagents, solvents, catalysts and protecting groups used during manufacture leave no mass behind and are not counted.
Where it comes from
Produced by enzymatic rearrangement of sucrose (from sugar beet/cane) using Protaminobacter rubrum enzyme, converting the 1,2-bond to a 1,6-bond. No petrochemical route is used commercially.
In plain English
A natural sugar made from table sugar by rearranging its structure with enzymes, used as a moisturiser and skin conditioner. Comes from sugar beet or cane.
CosIng definition: Isomaltulose is the disaccharide which consists of Glucose and Fructose linked by an -1,6-glycosidic bond.
