How we scored it
Fermentation polysaccharide (fermentation products=1.0); 1.0.
What counts. ISO 16128-2 scores the atoms that remain in the final ingredient. Reagents, solvents, catalysts and protecting groups used during manufacture leave no mass behind and are not counted.
Where it comes from
Produced by fermenting sucrose (from sugar beet or cane) with Leuconostoc bacteria, which secrete the dextran polysaccharide. It is purified by precipitation with no petrochemical building blocks.
In plain English
A polysaccharide made by fermenting sugar with natural bacteria. Used to bind ingredients together and thicken formulas.
CosIng definition: Dextran
